March 30th,2011 recipes from the kitchen

As mentioned yesterday, Recipes from he kitchen will hopefully if I can  take the time will be a weekly  posting.
Today we have breakfast of fresh homemade Cinnamon Buns
 
1 cup warm water                                                    2 eggs --beaten
2 teaspoons sugar                                                    4 to 5 cups flour
2 packages dry yeast                                              1 1/2 cups brown sugar
1/2 cup milk                                                               2/3 cup seedless raisins
1/4 cup margarine- i use butter                          2 teaspoons ground cinnamon
1/2 cup sugar
1 1/2 teaspoon salt
 
 
measure 1 cup of warm water into a large bowl. Stir in 2 teaspoons sugar and yeast. let stand 10 minutes then stir well.
 
Combine milk,and margarine in a saucepan. heat over low heat until liquid is warm and margarine is melted. Stir in 1/2 cup sugar and the salt. add liquid to the dissolved yeast. Add eggs and 1 1/2 cups flour. Stir in additional 3 cups flour to make a soft dough. Turn onto a lightly floured board: knead until smooth and elastic, about 8  to 10 minutes. Place in a greased bowl, turning to grease the top. Cover and let rise in a warm place, free from draft, until doubled in size. about 1 hr.
 
Punch down dough, turn out onto lightly floured board. Divide in half, Roll each half into a 18 x 9 oblong. Brush with melted butter. Combine 1 1/2 cups sugar, 2/3 cups raisins and cinnamon. Sprinkle  half of the mixture over each piece of dough. Roll each up as jelly roll, make 18 rolls. Seal edges firmly. Cut each roll into 12 pieces, about 1 1/2 inch wide. Place cut side up, in 2  9 inch round cake pans, or 2 greased 8 inch square pans. Cover and let rise in warm place , free from draft, until doubled in size, about 1 hr.
 
Bake at 350 f. for about 25 minutes, or until done. remove from pans and cool on wire rack serve plain or frosted.
 
I usually leave mine in a pan and spread the frosting over them.
