Recipes of the day-- August 16,2011

 RECIPE IN A JAR -----------GIFT IDEAS
 
STRAWBERRY OAT BARS MIX
 
2 1/4  cups uncooked quick oats
1 cup-all purpose flour
1 cup packed light brown sugar
2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
 
Layer ingredients attractively in  any order in  1 - qt food storage jar with tight fitting lid. Pack ingredients down slightly before adding another layer.
 
2. Cover top of jar with fabric; and attach gift tag with raffia or ribbon.
 
add;
1 cup butter softened
1 jar strawberry Oat Bar Mix from jar
1 can (21 ounces) strawberry pie filling
3/4 teaspoon almond extract
 
 
1/ Preheat oven to 375'F
 
2. Beat butter in large bowl until smooth,Add bar cookie mix to butter; beat until blended and crumbly.
 
3. Press 2/3 of crumb mixture onto bottom of ungreased 13 x 9 inch baking pan. Bake 15 minutes; let cool 5 minutes on a wire  rack.
 
4. Place pie filling in food processor or mixture and mix til smooth. Stir in almond extract.
 
5. Pour filling mixture over crust. Sprinkle remainng crumb mixture evenly over filling.
Return pan to oven; bake 20  - 25 mintues or until topping is golden and filling is slightly bubbly.
 
Cool completely on  wire rack.

GIFTS FROM THE JAR
 
 
 
CRANBERRY PECAN MUFFIN MIX
 
 
1 3/4 cups all-purpose flour
1 cup dried cranberries
3/4 cup chopped pecans
1/2 cup packed light brown sugar
2 1/2 teaspoon baking powder
1/2 teaspoon salt
 
1. Layer ingredients attractively in any order in a 1-qt food storage jar with tight fitting lid.
Pack ingredients down slightly  before adding another layer.
 
2.Cover top of jar with fabric: attach gift gift tag with raffia or ribbon.
 
 
1 jar of cranberry pecan muffin mix
3/4 cup milk
1/4 cup ( 1/2 stick) butter, melted
1 egg, beaten
 
1.Preheat oven to 400'F. Grease or paper-line 12 regular- size (2 1/2-inch) muffin cup
 
2. Pour contents of jar into large bowl. Combine milk,butter and egg in small bowl until blended; stir into jar mixture just until moistened. Spoon evenly into prepared muffin cups.
 
3. Bake 16 - 18 minutes or until toothpick inserted into centers comes out clean. Cool in pan on wire rack 5 minutes; remove from pan and cool completely on wire rack.
 
makes 12 muffins
 
 

August 9,2011,, Terrific Tuesday

Its a terrific Tuesday. The sun is up, the sky has cleared and is bright, very few scattered clouds now. Weatherman says rain is a coming, but for today its going to be nice.
 
Listening to Lily coo and stretch in her bassinet. My Anthony is still sleeping, Nick is getting up  and getting ready for his day program.
 
Lots to do today so for a few minutes I am enjoying my coffee and bagel.
 
Setting up the little refrigerator in the big barn. The eggs from now on will be in the barn. A safer way to store them for sale and customers can just to go the barn whether I am here or not. So need to plug that in this morning, got it cleaned out and moved last night.
 
Got signed back up with Local foods of Plymouth to sell some items on line, fresh berries and milk eggs. If your local to our area and want a easy way to get fresh items, free ranged or home grown look them up,, there are alot of local farms involved.  localfoodsplymouth.org       
Check out the different farms and see what they have to offer.
 
This morning I need to make more laundry soap. I dont understand how  5 gallon bucket of soap lasted less than 2 weeks. Some in my home that are now doing their own laundry dont understand a 1/4 -1/2 cup is more than enough, I found a 2 cup container in the bucket and thats what was being used.. oh but mom the clothes are really dirty ok thats where the 1/2c  comes in. Its doesnt  make bubbles, yes I know bubbles arent what cleans.. Just not getting it...
 
So today in my free time I will be grating more soap. But i do love the smell and it makes my hands feel so soft.
 
I suppose time to get busy, chores to do, muffins to make, babies to tend. Errands to run and things to get done.

August 8th,2011

Good Morning from the mountain. A gorgous morning. The weather man humidity will return, which it has. Looking out the front window a feeling of security sits in a pile, the winters wood has been delivered. Now to work it up and get it cut into length for the stoves and split and stacked.
Waiting for the rain to give the farmers a break so we can get our haying done. Although the gardens need it terribly. Double edged sword.
 
Today will find me cleaning my house. My poor house got turned up side down moving a new refrigerator in. Of course furniture had to moved around, 2 other frigs have to be moved out. Food has to be thrown out because the big frig died.
 
Had a great weekend cleaning up the yard. We mange to get the brush and bushes at the end of the deck all cleaned out and the ground cleaned up to place the dog kennel set up. So now we can kennel the dogs when we leave and let them spend more hrs out side.
 
Oh what a wonderful breeze just blew thru the front window.
 As I sit here I can feel the wonderful cool breeze.  A welcome relieve to the humid air that was just here.
 
Headed to the dump shortly,then to junk yard to get rid of old frig an stove.
 
Anthony just got up, and would like some breakfast, so I guess thats my clue to get busy.
 
Will have more time later to continue to write, you all have a blessed dat.

Welcome August

Good August morning to all. What a simply glorious morning out there. The sun is up and shining nicely, the temps are about 67. no wind and perfect for working outside. Which is where I be once I finish on here.
Anthony and Robbie are playing outside, Lily is talking to me. Trying to get a little in house cleaning down this morning also. Lots of stuff to go to the dump, some good some just get it outta here.
 No haying this week by the looks which is ok with me, I honestly needed a break. Sun burnt to the core and just plain wore out and tired.
Its blueberry picking time around here. Have been enjoying the weather and the peace and quiet of the fields in the early morning. Took Lily last week with me, so many people just blown away to see a baby in a blueberry patch.
Anthony is back and I am sure it will be different this yr than last,, he was pretty much by my side, hoping this yr it will still interest him to go and be good,,LOL a 2 yr old in an blueberry patch. awh he is a sweet boy. I have missed him terribly. Actually eating some fresh berries with a little cream this morning,, just love it.
 
Going to be doing some yard clean up today, a bunch of rocks will be added to the pile to fill in a big hole in my  lawn. Tired of tripping over them and they are starting to look pretty silly just laying around.
 
Had a great time at my grand daughters birthday party yesterday, it was nice to see Faith and Hailey. Glad my sister Irene and her b/f Robbie came and a friend Patty, made Haileys day to to see us there. Pk and Pj did a nice job on the cook out and cake.
 
Need to get busy this morning and open up the farm stand, lots of things out there more being added every day. I have 2 little girls aprons almost finished. There are 2 new fleece baby blankets,, I know ,, no one is thinking winter yet, but being August winter could come any time, the weather has been strange. Working on more mittens also.
 
Received a new to me serger this weekend, I am so happy now things can have a more finished look to them.
Also got a new order for a baby shower cake  for Saturday.
Going to be a busy week,
 
Garden  is in need of some weeding but is starting to produce nicely, picked cucumbers and tomatoes, summer squash the other day.
 
Sold a bunch on farm stand.
August is a blessed month as it has been 7yrs today my Nick suffered a massive seizure and stroke.. If it werent for out local fire dept I would of lost him.. So Last yr we started using August a donation month. 50% of the sales from the farm stand go to the fire dept to use as they see fit.
 
Need to make sure I post that on face book also.
 
Well I suppose Lily is requiring my attention and the day is so nice time to get out side
